Ingredients
2 tablespoons extra virgin olive oil
3 garlic cloves, minced
1 pound boneless skinless chicken breast, sliced
1/2 teaspoon smoked paprika
Salt and pepper to taste
12 oz penne pasta
1 cup reduced-fat heavy cream
1/2 cup grated Parmesan cheese
2 tsp lemon zest
1 cup frozen peas
Instructions
Cook pasta al dente, drain and set aside.
Heat oil in a large pan and sauté garlic until fragrant.
Add chicken, paprika, salt, and pepper; cook until golden and done.
Pour in the cream, stirring occasionally. Simmer for 5 minutes.
Stir in Parmesan and lemon zest. Let it thicken.
Add peas and pasta; mix until everything is evenly coated.
Notes
Use Greek yogurt and almond milk for a healthier twist.
Add spinach or mushrooms for more bite and texture.
