A quick, flavorful one-pan chicken dinner bursting with lemon, garlic, and herbs for a wholesome and easy meal.
Ingredients
4 boneless chicken thighs
3 tablespoons olive oil
5 garlic cloves, minced
1 teaspoon smoked paprika
1 teaspoon dried Italian herbs
Salt and black pepper to taste
Juice of ½ lemon
Zest of 1 lemon
¼ teaspoon chili flakes (optional)
2 cups broccoli florets
1 large red onion, cut into wedges
1 tablespoon butter (optional)
Instructions
Preheat oven to 425°F.
Season chicken with salt, pepper, paprika, and herbs.
Sauté garlic in olive oil until fragrant and pour into baking dish.
Add chicken and arrange veggies around it.
Drizzle lemon juice and zest over everything.
Bake for 20–25 minutes or until chicken is fully cooked.
Baste with pan juices and butter halfway through.
Let rest 5 minutes before serving.
Notes
Use boneless chicken breasts if thighs are unavailable.
Add sliced baby potatoes for a heartier meal.
