Description
A smoky, slightly spicy one-pot chicken sausage jambalaya that’s a soulful, weeknight-friendly twist on a Southern classic.
Ingredients
12 oz chicken sausage, smoked or spicy, sliced
1 cup uncooked long-grain rice (or brown rice)
1 medium onion, finely chopped
1 large bell pepper, chopped (any color)
2 celery stalks, chopped
3 garlic cloves, minced
1 can (15 oz) crushed tomatoes
2 ½ cups chicken broth (low-sodium recommended)
1–2 tsp Cajun seasoning
Instructions
1. Sauté sliced sausage in a ceramic non-stick pan until browned and crispy.
2. Add onions, peppers, and celery. Sauté until tender.
3. Stir in garlic and Cajun seasoning. Let it bloom for 30 seconds.
4. Pour in rice, crushed tomatoes, and broth.
5. Bring to a boil, then reduce heat to low.
6. Cover and simmer until rice is fluffy and liquid is absorbed (about 25–30 minutes).
7. Fluff, taste, and season with salt or hot sauce as desired.
Notes
Feel free to customize with shrimp, shredded chicken, or vegan sausage.
Use a tight-fitting Dutch oven to avoid steam loss.
Long-grain rice keeps the texture perfect—rinse before use to remove excess starch.
Add leafy greens like spinach or kale for a veggie boost.
