Ingredients
1 pack of chickpeas pasta (8 ounces)
1 cup cherry tomatoes, halved
1 red bell pepper, thinly sliced
2 cloves garlic, minced
2 tablespoons olive oil
1 teaspoon crushed red pepper flakes
Salt and pepper to taste
Fresh basil leaves
1/4 cup grated Parmesan cheese or nutritional yeast
Instructions
Bring a large pot of salted water to a boil, add pasta, and cook for 5-7 minutes.
Heat olive oil in a skillet, sauté garlic until golden.
Add bell pepper and tomatoes, cook until soft.
Season with pepper flakes, salt, and pepper.
Toss cooked pasta with vegetable mix.
Garnish with basil and cheese, serve immediately.
