Ingredients

1 lb ground beef

1 yellow onion, diced

3 cloves garlic, minced

2 tbsp tomato paste

1 can (15 oz) diced tomatoes

2 cups elbow macaroni

1.5 cups shredded cheddar cheese

1.5 cups beef broth

1 tsp cumin

1 tsp smoked paprika

1/2 tsp chili powder

Salt and pepper to taste


Instructions

1. In a large skillet or Dutch oven, brown ground beef over medium heat.

2. Drain excess fat and add onions and garlic. Sauté until translucent.

3. Stir in tomato paste, diced tomatoes, and spices. Simmer for 5–7 minutes.

4. Add beef broth and bring to a boil. Stir in uncooked macaroni.

5. Lower heat, cover, and simmer 10–12 minutes until pasta is tender.

6. Turn off heat, mix in shredded cheese until melted and creamy.

Notes

Substitute ground beef with turkey or plant-based crumbles for variation.

Fire-roasted tomatoes add a smoky twist.

Store leftovers in an airtight container for up to 4 days or freeze for 3 months.
