A rich and creamy chocolate cheesecake with a chocolate cookie crust, perfect for celebrations or weekend treats.
Ingredients
2 cups crushed chocolate graham crackers
1/2 cup unsalted butter, melted
3 (8-oz) blocks cream cheese, softened
1 cup granulated sugar
1 tsp alcohol-free vanilla extract
1/2 cup sour cream
1.5 cups melted semi-sweet chocolate chips
3 large eggs
Instructions
Preheat oven to 325°F and prepare a greased springform pan.
Mix cookie crumbs and butter; press into the pan as a crust.
Whip cream cheese and sugar until light and fluffy.
Add eggs one at a time while mixing on low, then stir in vanilla, sour cream, and melted chocolate.
Pour into crust and bake for 60 minutes or until set at the edges.
Cool in oven with door ajar for 1 hour, then refrigerate at least 4 hours before serving.
Notes
Use room-temperature ingredients for smooth blending.
A water bath gives the creamiest texture.
