Description
A vibrant, herbaceous rice dish made with fresh cilantro, lime, and garlic—perfect as a side or base for bold, flavorful meals.
Ingredients
1 cup jasmine or basmati rice
2 cups water or low-sodium chicken broth
1 tablespoon olive oil or unsalted butter
1/2 teaspoon salt
2 cloves garlic, minced
Juice of 1 lime (about 2 tablespoons)
Zest of 1 lime
1 cup packed fresh cilantro, finely chopped
Optional: Chopped jalapeño or serrano
Optional: Diced avocado
Optional: Green onions
Instructions
1. Rinse your rice under cold water until the water runs clear.
2. In a medium pot, heat olive oil or butter over medium heat. Add garlic and sauté until fragrant (about 1 minute).
3. Stir in the rinsed rice and toast for 2–3 minutes.
4. Pour in the water or broth, add salt, stir once, then bring to a boil.
5. Cover, reduce heat to low, and simmer for 15–18 minutes.
6. Remove from heat and let sit covered for 5 minutes.
7. Fluff with a fork.
8. Fold in chopped cilantro, lime juice, and zest. Stir evenly.
9. Taste and adjust seasoning as needed.
10. Optionally, drizzle with extra olive oil before serving.
Notes
Use brown rice or quinoa for a fiber-rich version.
Mix with riced cauliflower for a low-carb option.
Pairs well with grilled proteins, veggies, and bold sauces.
Always add cilantro after cooking for best flavor.
