Description
Moist, warmly spiced cinnamon cake made with Greek yogurt, brown sugar, and a touch of vanilla. Ideal for gatherings or cozy treats.
Ingredients
2 cups all-purpose flour
2 tsp baking powder
1 tbsp ground cinnamon
1/4 tsp salt
1/2 cup unsalted butter, softened
1 cup packed brown sugar
2 large eggs
1 tsp alcohol-free vanilla extract
3/4 cup plain Greek yogurt
1/4 cup milk (oat or almond milk optional)
Instructions
Preheat oven to 350°F and grease a 9-inch pan.
In a large bowl, cream butter and sugar until fluffy.
Add eggs one at a time, then mix in yogurt, vanilla, and milk.
In another bowl, whisk dry ingredients and slowly combine with wet ingredients.
Pour batter into pan, adding optional cinnamon-sugar swirl if desired.
Bake for 36–40 minutes or until a toothpick comes out clean.
Cool for 15 minutes before serving.
Notes
Use parchment rounds for clean removal.
Add a cinnamon sugar swirl mid-layer for added texture.
