Description
Soft, spiced cinnamon cookies with crispy edges and chewy centers. Loaded with aromatic cinnamon and perfect for gifting or snacking.
Ingredients
2 1/4 cups all-purpose flour
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp salt
1 cup unsalted butter, softened
3/4 cup brown sugar
1/2 cup granulated sugar
2 large eggs
1 tsp vanilla extract (alcohol-free)
1/4 cup cinnamon sugar (for rolling)
Instructions
Preheat oven to 350°F (177°C). Line baking sheets with parchment.
Whisk together flour, baking soda, cinnamon, and salt.
Beat butter with sugars until light and fluffy, about 3–4 minutes.
Add eggs one at a time, then mix in vanilla.
Add dry ingredients; mix until just combined.
Chill dough for 20 minutes for better structure (optional).
Roll into 1.5-inch balls and coat in cinnamon sugar.
Place on baking sheet with 2-inch spacing. Bake 9–11 minutes.
Cool 5 minutes on sheet, then transfer to wire rack.
Notes
Use room-temperature eggs for best incorporation.
Chill dough for thicker, bakery-style cookies.
Store in air-tight container or freeze for up to 2 months.
