Ingredients
2 cups all-purpose flour
1/2 cup brown sugar
1/2 cup white sugar
1 tbsp ground cinnamon
2 tsp baking powder
1/2 tsp salt
2 large eggs
1 cup milk (or dairy-free alternative)
1/2 cup vegetable oil
Instructions
Preheat oven to 375°F and grease or line a 12-cup muffin tin.
In a bowl, combine flour, baking powder, cinnamon, and salt.
In another bowl, whisk together both sugars, eggs, milk, and oil.
Pour wet ingredients into dry and mix gently until just combined.
Divide batter into muffin cups, filling 3/4 full.
Bake for 18–20 minutes or until a toothpick comes out clean.
Cool for 5 minutes, then transfer to a wire rack.
Notes
Optionally top with cinnamon sugar before baking.
For healthier versions, use whole wheat flour or add mashed banana.
