Description
Soft, chewy coffee-infused dessert bars made with rich espresso powder, perfect for any coffee lover’s sweet tooth.
Ingredients
1 cup light brown sugar
1/2 cup neutral oil (like grapeseed)
2 eggs
2 tbsp instant espresso powder or 1/4 cup strong coffee
1 tsp alcohol-free vanilla extract
1 cup all-purpose flour
1/2 tsp baking powder
1/4 tsp salt
Optional: 1/2 cup chocolate chips or nuts
Instructions
Preheat oven to 350°F (177°C). Line an 8×8 baking pan with parchment or non-stick spray.
In a bowl, whisk together brown sugar and oil until combined.
Add eggs, espresso, and vanilla. Mix well.
Sift flour, baking powder, and salt. Fold into the wet mix until just combined.
Optionally stir in chocolate chips or nuts.
Spread batter into the pan evenly.
Bake for 25–28 minutes until the center is set.
Cool for 5 minutes, slice into bars, and serve.
Notes
Use decaf espresso powder for caffeine-free version.
Try cardamom or cinnamon as flavor boosts.
Double the recipe for a 9×13 pan and freeze individual squares.
