Ingredients
2 cups crushed graham crackers
5 tbsp unsalted butter, melted
3 (8 oz) blocks cream cheese, room temperature
1 cup granulated sugar
3 large eggs
1 tbsp cornstarch
1/2 cup sour cream
1/4 cup heavy cream
2 tbsp instant coffee granules or espresso powder
1 tsp vanilla bean
1/2 tsp cinnamon (optional)
Pinch of salt
Instructions
Preheat oven to 325°F. Grease a 9-inch springform pan.
Mix graham cracker crumbs and melted butter. Press into pan base.
Beat cream cheese and sugar until fluffy. Add eggs one at a time, mixing well.
Blend in sour cream, heavy cream, cornstarch, coffee granules, vanilla, salt, and cinnamon.
Pour mixture onto crust. Tap to smooth.
Place in a water bath and bake for 50–55 minutes.
Cool on counter 1 hour, then chill in fridge at least 4 hours before serving.
Notes
Use decaf coffee for a low-caffeine version.
Freeze leftover slices individually for easy future servings.
