Moist, rich coffee cupcakes with bold espresso flavor, paired perfectly with your favorite frosting.
Ingredients
1 ½ cups all-purpose flour
1 ½ tsp baking powder
½ tsp salt
2 tbsp instant espresso powder
¼ cup hot water
1 cup granulated sugar
½ cup neutral oil or avocado oil
2 eggs, room temp
½ cup non-dairy milk (like oat or soy)
1 tsp halal vanilla bean paste
Instructions
Preheat oven to 350°F and line a muffin tin.
Dissolve espresso powder in hot water, set aside.
Mix flour, baking powder, salt in one bowl.
Whisk sugar and oil until creamy, then add eggs.
Mix in brewed espresso and vanilla.
Alternately add flour mixture and milk, blending until combined.
Divide batter into liners and bake for 20–22 minutes.
Cool completely before frosting.
Notes
For stronger flavor, add 1 tsp cocoa powder.
Use halal-certified vanilla or natural alternatives.
Perfect with mocha or cinnamon cream cheese frosting.
