Description
Fluffy baked donuts infused with rich coffee flavor and topped with an espresso glaze. A bold, easy, and healthier alternative to fried donuts.
Ingredients
2 cups all-purpose flour
1/2 cup brown sugar
1/4 cup white sugar
1 tablespoon finely ground instant coffee
1 tablespoon baking powder
1/2 teaspoon cinnamon
1/4 teaspoon salt
3/4 cup almond milk
1/4 cup vegetable oil
2 eggs
1 teaspoon vanilla bean
1/2 cup powdered sugar (optional glaze)
1 tablespoon brewed espresso (optional glaze)
Instructions
Preheat oven to 350°F (175°C) and lightly grease a donut pan.
Whisk together dry ingredients: flour, sugars, coffee, baking powder, cinnamon, and salt.
In a separate bowl, whisk together almond milk, oil, eggs, and vanilla.
Combine wet and dry ingredients until smooth.
Fill donut molds 3/4 full using a spoon or batter dispenser.
Bake for 12–14 minutes. Let cool for 10 minutes.
If using, mix powdered sugar and brewed espresso to make glaze.
Drizzle glaze over cooled donuts and serve.
Notes
Bake until tops spring back gently when pressed.
Use instant coffee for more concentrated flavor.
Glaze only fully cooled donuts to prevent melt.
