Ingredients
250g corn pasta
2 tablespoons olive oil
1 cup fresh corn kernels
3 cloves garlic, minced
1 cup cherry tomatoes, halved
1/4 cup grated Parmesan cheese
Salt and black pepper to taste
Fresh basil leaves
Instructions
Bring a large pot of salted water to a boil. Cook corn pasta until al dente. Drain and set aside.
Heat olive oil in a skillet over medium heat. Add garlic and corn kernels, sauté until corn is tender.
Add cherry tomatoes and toss everything with the cooked pasta in the skillet.
Remove from heat. Sprinkle Parmesan cheese, stir to combine, and adjust seasonings.
Serve in bowls garnishing with fresh basil leaves.
Notes
For a dairy-free version, substitute Parmesan with nutritional yeast.
Reserve some pasta cooking water to maintain creaminess when reheating.
