Ingredients

4 ears of corn, shucked
1 red bell pepper, diced
1 tablespoon olive oil
Fresh herbs: cilantro and basil, roughly chopped
Salt and pepper to taste
Instructions
Preheat your grill to medium-high heat.
Lightly brush corn on the cob with olive oil, season with salt and pepper.
Grill corn for 10-15 minutes, turning occasionally.
Slices kernels into a large mixing bowl.
Add red bell pepper and freshly chopped herbs.
Squeeze a bit of lemon over the salad for extra zing.
