A comforting and creamy corn soup inspired by Southern traditions.
Ingredients
4 cups fresh or frozen corn kernels
2 tbsp unsalted butter
1 medium onion, finely chopped
2 cloves garlic, minced
4 cups chicken or vegetable broth
1 cup heavy cream or coconut milk
Salt and pepper to taste
Optional toppings: chopped cilantro, diced red peppers, sliced jalapeños
Instructions
Melt butter in a large pot over medium heat.
Add onions and cook until translucent, stirring occasionally.
Stir in garlic and cook for an additional minute.
Add corn kernels and cook for 5 minutes.
Pour in the broth, bringing the mixture to a simmer. Leave to cook for 15 minutes.
Remove from heat, then use an immersion blender to blend the soup to your desired consistency.
Stir in heavy cream, season with salt and pepper.
Garnish with your choice of toppings before serving.

Consider substitutions like coconut milk for creaminess.
