Description
Cornbread waffles combine the golden, buttery richness of classic Southern cornbread with the crispy texture of waffles, creating a dish that’s both nostalgic and refreshingly creative. Perfect for breakfast, brunch, or dinner, they pair beautifully with both savory and sweet toppings.
Ingredients
1 cup yellow cornmeal
1 cup all-purpose flour
1 tablespoon sugar
1 tablespoon baking powder
1/2 teaspoon salt
2 large eggs
1 1/2 cups buttermilk
1/4 cup unsalted melted butter
Optional: 1/2 cup shredded cheddar, 1 minced jalapeño, or chopped scallions
Instructions
1. Preheat your waffle iron to medium-high. Spray well to prevent sticking.
2. In a large bowl, mix cornmeal, flour, sugar, baking powder, and salt.
3. In a separate bowl, beat the eggs, then whisk in buttermilk and melted butter.
4. Pour wet ingredients into dry. Stir until just combined—lumpy is your friend.
5. Let the batter rest for 5 minutes while the griddle heats.
6. Pour batter into waffle iron (don’t overfill!). Close lid and cook 4–5 mins, until crispy and golden brown.
7. Carefully remove and set on a wire rack to keep them crisp.
Notes
Use gluten-free flour blend if needed.
For a flavor boost, stir in shredded cheese, jalapeños, or scallions.
Pairs perfectly with chili, fried chicken, honey butter, or maple syrup.
Holds heat well—great for meal prep or brunch spreads.
