Description
A warm, flavorful and customizable stew perfect for Cozy Sunday Suppers. Great for family meals and meal prep.
Ingredients
2 lbs grass-fed beef chuck or halal chicken thighs, cubed
3 cloves garlic, minced
1 large onion, diced
4 carrots, peeled and chopped
3 stalks celery, chopped
2 cups potatoes or sweet potatoes, cubed
2 tbsp olive oil
2 tsp smoked paprika
1 tsp cumin
Salt & pepper to taste
5 cups homemade or low-sodium broth
2 bay leaves
1 tsp rosemary or thyme leaves
Instructions
In a large Dutch oven, heat oil over medium heat and sauté onions and garlic until translucent.
Add cubed meat and brown on all sides, about 5–7 minutes.
Stir in carrots, celery, and potatoes, coating ingredients with spices.
Pour in broth and add bay leaves and herbs.
Bring to a boil, then reduce heat, cover, and simmer for 60–70 minutes.
Remove bay leaves, taste-test for seasoning, and serve warm.
Notes
Swap meat for lentils or chickpeas for a vegetarian version.
Add a splash of lemon juice before serving to brighten flavors.
Perfect to freeze in airtight containers for up to 60 days.
