These bright and zesty cranberry bars feature a buttery oat crust, tangy citrus cranberry filling, and a crispy golden crumb topping. Perfect for holidays or year-round indulgence.
Ingredients
2 cups fresh or frozen cranberries
1 tablespoon orange zest
1/2 cup orange juice
3/4 cup sugar
1 1/2 cups all-purpose flour
1/2 tsp baking powder
1/4 tsp kosher salt
1 cup unsalted butter, softened
1 cup rolled oats
Instructions
Preheat oven to 350°F. Line an 8×8 pan with parchment paper.
Cook cranberries, orange juice, and sugar over medium heat for about 10 minutes until thick.
Mix flour, oats, baking powder, and salt in a bowl. Cut in softened butter until crumbly.
Press 2/3 of the mixture firmly into the pan. Top with cranberry filling.
Sprinkle remaining crumb mixture over the cranberry layer.
Bake 35–40 minutes or until golden brown.
Cool completely before slicing into bars.
