A moist, tart-sweet cranberry walnut bread with orange zest—perfect for holidays or cozy mornings.
Ingredients
2 cups all-purpose flour
1 cup sugar
1 ½ teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
Zest of one orange
¾ cup orange juice
4 tablespoons melted butter
1 egg
1 ½ cups fresh cranberries
1 cup chopped walnuts (optional)
Instructions
1. Preheat the oven to 350°F. Grease and flour a 9×5 loaf pan.
2. In a large bowl, whisk flour, sugar, baking powder, baking soda, and salt. Add orange zest.
3. In a separate bowl, mix orange juice, melted butter, and egg. Pour into dry ingredients and stir gently.
4. Fold in cranberries and walnuts. Don’t overmix—batter should look lumpy.
5. Pour into prepared pan and smooth the top.
6. Bake for 50–55 minutes, until a toothpick poked in the center comes out clean.
7. Let cool 10 minutes in pan, then transfer to rack to cool completely.
Notes
Coat cranberries lightly in flour before adding to batter to prevent sinking.
Use coconut sugar or almond flour for healthier twists.
Freeze in slices for grab-and-go breakfasts.
