Description
A moist and buttery cranberry cake with bursts of tart berries and a hint of orange zest. Perfect for holidays or any special occasion.
Ingredients
2 cups fresh cranberries
2 cups all-purpose flour
1 ½ cups granulated sugar
1 cup unsalted butter, softened
4 large eggs
2 tsp baking powder
1 tsp pure orange zest
Instructions
Preheat oven to 350°F. Grease a 9×13 baking dish.
In a large mixing bowl, cream butter and sugar until fluffy.
Add eggs one at a time, beating after each.
Mix in orange zest.
In a separate bowl, whisk flour and baking powder.
Add dry ingredients to wet, stir until just combined.
Fold in cranberries gently.
Pour into pan, bake 40–45 minutes or until toothpick comes out clean.
Cool for 10 minutes, then transfer to rack. Optional: glaze before serving.
Notes
Toss cranberries in sugar to reduce tartness.
Use silicone bakeware for easy cleanup.
