Description
A bold, refreshing twist on classic cranberry salad—packed with tart cranberries, crunchy nuts, citrus, and a hint of sweetness. Perfect year-round.
Ingredients
1½ cups fresh or frozen cranberries
½ cup dried cranberries
½ cup chopped walnuts or pecans
1 orange, zested and juiced
2 tbsp maple syrup or honey
1 small apple, finely diced
1 tbsp fresh mint or basil (optional)
Instructions
1. Pulse fresh cranberries in a food processor until finely chopped but not mushy.
2. In a large bowl, mix chopped cranberries, dried cranberries, orange zest, juice, and sweetener.
3. Stir in chopped apple and toasted nuts. Let rest 5–10 minutes.
4. Fold in herbs and adjust sweetness if needed.
5. Chill for 20–30 minutes for deeper flavor (optional).
6. Serve cold or at room temperature. Great on greens or as a standalone dish.
Notes
Optional add-ins: crumbled feta, quinoa, arugula.
Serve in a hollowed orange peel or as part of a charcuterie board.
