Ingredients
2 tablespoons olive oil
1 large yellow onion, chopped
4 cloves garlic, minced
2 pounds lean ground beef or turkey (halal-certified)
2 tablespoons tomato paste
2 cans (15 oz) fire-roasted diced tomatoes
2 cans (15 oz) kidney beans, drained and rinsed
1 can (15 oz) black beans, drained and rinsed
2 ½ cups low sodium vegetable stock or halal beef broth
3 tablespoons chili powder
2 teaspoons ground cumin
1 teaspoon smoked paprika
¼ teaspoon cayenne pepper (optional)
Salt and pepper, to taste
Juice from ½ a lime
Instructions
Heat oil and cook onions until softened.
Add garlic and stir for 1 minute.
Brown the meat, breaking it as it cooks.
Stir in tomato paste and spices, toast 3 minutes.
Add tomatoes, beans, and broth. Stir well.
Bring to a boil, reduce heat, and simmer for 45–50 minutes.
Add lime juice, adjust seasonings, and serve hot.
Notes
Customize spice level by adjusting cayenne.
Use different beans or add portobello for vegetarian version.
Freezes well for up to 3 months.
