Ingredients

2 large cucumbers, peeled and seeded
1 cup plain Greek yogurt
2 tablespoons fresh dill, chopped
2 tablespoons mint leaves, chopped
1 garlic clove, minced
1 tablespoon lemon juice
Salt and pepper to taste
Instructions
Puree the peeled cucumbers in a blender until smooth.
Add yogurt, dill, mint, garlic, and lemon juice to the blender.
Blend until the mixture is smooth.
Strain the soup for a silky texture.
Chill for at least 30 minutes before serving.
Notes
Adjust thickness with avocado or more yogurt.
