Ingredients
1½ cups all-purpose flour (sifted)
1 cup granulated sugar
½ cup vegetable oil
2 large eggs (room temperature)
½ cup full-fat milk or oat milk
1 tbsp baking powder
1 tsp vanilla powder
Pinch of salt
Instructions
Preheat oven to 350°F (175°C) and line cupcake tin with liners.
Mix dry ingredients: flour, sugar, salt, baking powder.
Whisk eggs, oil, milk, and vanilla powder in a separate bowl.
Gradually add wet mixture to dry ingredients and combine until smooth.
Divide batter among cupcakes, filling ⅔ of each liner.
Bake for 18–20 minutes or until toothpick comes out clean.
Cool 5 minutes in pan, then transfer to wire rack to cool completely.
Notes
Use vanilla powder to avoid alcohol-based extracts.
Store cooled cupcakes in an airtight container with a slice of bread to retain moisture.
