Description
A rich, naturally sweet date cake that’s tender, full of warm spices, and customizable for healthier bakes. Perfect for dessert or brunch.
Ingredients
1 ½ cups chopped Medjool dates
1 cup hot water
1 tsp baking soda
½ cup avocado or sunflower oil
¾ cup brown sugar
2 large eggs
1 tsp vanilla extract (non-alcoholic)
1 ½ cups all-purpose flour or whole wheat flour
1 tsp baking powder
½ tsp ground cinnamon
¼ tsp ground nutmeg
Pinch of salt
Optional: ½ cup chopped walnuts
Optional: ¼ cup shredded coconut
Instructions
Preheat oven to 350°F and grease a 9-inch pan.
Place chopped dates in a bowl and cover with hot water, then stir in baking soda and let soak for 15 minutes.
In another bowl, whisk oil and sugar together. Add eggs and vanilla; mix well.
Stir in the soaked date mixture.
Sift together flour, baking powder, and spices. Incorporate into the wet mix gradually.
Fold in add-ins like coconut or nuts if desired.
Pour batter into prepared pan and bake 40–45 minutes until a toothpick comes out clean.
Cool and serve.
Notes
For deeper flavor, use coconut sugar instead of brown sugar.
To make vegan, replace eggs with flax eggs.
Pairs well with spiced tea or coffee.
