Savory, spiced sweet potato chickpea bites perfect as a warm appetizer. Vegan and naturally gluten-free with customizable spice levels.
Ingredients
1 cup mashed sweet potatoes
1 can (15 oz) chickpeas, drained and rinsed
2 tablespoons olive oil
1 tablespoon lemon juice
½ teaspoon garlic powder
1 teaspoon cumin
Optional: pinch of cayenne
2 tablespoons minced green onions
1 tablespoon chopped parsley
¼ teaspoon sea salt
¼ cup breadcrumbs or crushed crackers
Instructions
Preheat oven to 375°F. Line a baking tray with a silicone mat.
Mash chickpeas in a mixing bowl. Combine with mashed sweet potatoes.
Add olive oil, lemon juice, garlic, cumin, salt, and cayenne. Stir well.
Fold in green onions, parsley, and breadcrumbs until fully incorporated.
Scoop and roll into bite-size rounds; place on prepared tray.
Bake 20 minutes, turning halfway, until slightly browned and crisp.
Serve warm with a yogurt or tahini-based dipping sauce.
Notes
Use oats for gluten-free version.
Make ahead and reheat at 300°F.
