Ingredients
3 large ripe bananas (or 1½ cups mashed)
½ cup brown sugar (or maple syrup)
2 large eggs (or flax eggs for vegan)
1¾ cups all-purpose flour (can sub half whole wheat)
1 tsp baking soda
½ tsp salt
1 tsp cinnamon (optional but recommended)
½ cup melted butter (or coconut oil)
Instructions
1. Preheat oven to 350°F and grease a 9×5″ loaf pan.
2. Mash ripe bananas in a large bowl until smooth.
3. Stir in the brown sugar, eggs, and melted butter.
4. In a separate bowl, whisk together flour, baking soda, cinnamon, and salt.
5. Gradually add dry ingredients to wet, folding until just combined. Don’t overmix.
6. Pour batter into the prepared pan and smooth the top.
7. Bake for 45–55 minutes, or until a toothpick comes out clean.
8. Cool for 10 minutes in the pan before transferring to a wire rack.
Notes
Use super-ripe bananas (almost black).
Let batter rest for 10 minutes before baking for a more tender crumb.
Avoid overmixing to prevent tough texture.
