Description
A 25-minute plant-based dinner made with chickpeas, garlic, and a creamy coconut base. Perfect for busy weeknights.
Ingredients
2 tablespoons olive oil
2 cloves garlic, minced
1 can chickpeas (15 oz), rinsed and drained
1/2 cup vegetable broth
1/4 cup coconut cream
Salt and pepper to taste
Instructions
Heat olive oil in a skillet over medium heat.
Add garlic and sauté for 1 minute until fragrant.
Add chickpeas, cook for 3 minutes.
Pour in broth and simmer for 5 minutes.
Stir in coconut cream, reduce heat, and simmer for 7–8 minutes.
Season with salt and pepper. Serve hot.
Notes
Serve over rice, quinoa, or flatbread.
Add chili flakes for heat or lemon juice for brightness.
