Ingredients
2 cups pasta (macaroni or bowtie)
1 lb boneless, skinless chicken thighs, diced
1 tablespoon olive oil
1 teaspoon garlic powder
1/2 teaspoon paprika
1/2 cup Greek yogurt
1/2 cup shredded cheddar cheese
1 cup chopped steamed broccoli
1/4 cup low-sodium broth
1/4 cup whole grain breadcrumbs
Salt to taste
Instructions
Preheat oven to 375°F.
Boil pasta until just al dente, about 8 minutes. Drain and set aside.
Heat olive oil in a skillet. Sauté diced chicken with garlic powder and paprika until golden and cooked through.
Stir in Greek yogurt, cheddar cheese, and broth until creamy.
Fold in chopped steamed broccoli.
Combine creamy chicken mixture with the pasta and place in a baking dish.
Top with breadcrumbs and extra cheese.
Bake for 18–20 minutes until bubbly and golden.
Notes
Use pre-steamed broccoli or microwave in a bowl with water for 2 minutes.
Greek yogurt adds creaminess and tang while reducing fat.
