Turkey & Mashed Potato Egg Casserole

Description

An easy leftover breakfast casserole combining mashed potatoes, shredded turkey, veggies, and eggs into a hearty, bake-ahead meal.


Ingredients

Scale

2 cups mashed potatoes (or sweet potatoes)

1 cup shredded cooked turkey (or chicken)

4 large eggs

1/2 cup sautéed vegetables (bell peppers, spinach)

1/4 cup chopped green onions

1/3 cup shredded cheddar

1/2 tsp smoked paprika

Pinch of garlic powder

Olive oil or nonstick spray


Instructions

Preheat oven to 375°F and grease baking dish.

In a bowl, whisk eggs with seasonings.

Stir in mashed potatoes until smooth.

Fold in turkey, veggies, cheese, green onions.

Pour mixture into baking dish or muffin pan.

Bake for 30 minutes or until set and golden.

Cool for 5 minutes before serving or storing.

Notes

Freeze leftovers individually for busy weekday mornings.

Use silicone muffin trays for portioned meal prep.

Great for using turkey, chicken, or even tofu.
