A quick, comforting one-pot noodle recipe made with garlic, onion, broth, coconut milk, and melted cheese. Perfect for weeknight dinners with minimal cleanup.
Ingredients
8 ounces fettuccine or linguine
2 tablespoons unsalted butter
3 cloves garlic, minced
1 small yellow onion, chopped
1.5 cups vegetable broth
1 cup coconut milk or heavy cream
1/2 teaspoon red pepper flakes
Salt and pepper to taste
1/2 cup shredded cheddar or mozzarella cheese
Optional: parsley or spinach for garnish
Instructions
Melt butter in pot over medium heat. Sauté garlic and onions 3–4 minutes.
Add dry noodles, then broth and coconut milk. Stir to combine.
Add chili flakes, bring to boil, then reduce to simmer for 10–12 minutes.
Stir often. Once noodles are cooked and sauce thickens, fold in cheese.
Season with salt and pepper, garnish with parsley or spinach. Serve hot.
Notes
Swap in gluten-free pasta or rice noodles if desired.
Use nutritional yeast for a dairy-free alternative.
