Ingredients
1 tbsp olive oil
3 garlic cloves, minced
1 cup canned pumpkin puree
8 oz penne pasta
2 cups vegetable broth
1 cup unsweetened almond milk
1 tsp smoked paprika
Salt and pepper to taste
Instructions
Heat olive oil in a deep skillet over medium heat.
Sauté garlic for 1 minute until fragrant.
Add pumpkin and smoked paprika; stir for 2 minutes.
Add dry pasta, broth, and almond milk; bring to simmer.
Cook for 10–12 minutes, stirring occasionally, until pasta is tender.
Season to taste with salt and pepper.
Serve warm with optional olive oil drizzle or vegan cheese topping.
Notes
Use gluten-free penne if preferred.
Dish reheats well for up to 3 days.
Add kale or spinach in final 2 minutes for added greens.
