Ingredients
1 lb ground chicken
1 cup finely shredded carrots
1/4 cup grated zucchini (moisture squeezed out)
1/2 cup panko breadcrumbs
1/4 tsp garlic powder
1/2 tsp sea salt
1 egg
1/4 cup shredded cheddar cheese
Mini burger buns or soft dinner rolls
Instructions
Preheat oven to 375°F and line a baking sheet with parchment.
Mix ground chicken, carrots, zucchini, breadcrumbs, egg, cheese, garlic powder, and salt in a bowl.
Form into 8 small patties.
Bake for 10–12 minutes or until golden and internal temp reaches 165°F.
Serve on mini buns with your preferred toppings.
Notes
