A fast, flavorful baked shrimp recipe made with garlic, lemon, and umami-packed miso. Perfect for weeknight dinners with minimal cleanup.
Ingredients
1 lb large peeled shrimp
2 tbsp olive oil
1 tsp miso paste
1 tbsp honey
2 garlic cloves, minced
2 tbsp lemon juice
1/4 tsp black pepper
Fresh chopped parsley
1 lemon, thinly sliced
Instructions
Preheat oven to 400°F (204°C). Line a baking dish with parchment or lightly oil.
In a small bowl, whisk together olive oil, miso paste, honey, minced garlic, lemon juice, and black pepper.
Toss shrimp in the mixture until coated evenly.
Arrange shrimp in a single layer in the dish and lay lemon slices on top.
Bake for 12 minutes until shrimp are pink, firm, and aromatic.
Garnish with chopped parsley and serve hot.
Notes
You can substitute soy sauce for miso paste if needed.
Goes well with rice, couscous, or a light salad.
