Description
This filling, one-pot lentil soup is packed with pantry ingredients and simple vegetables. It’s the perfect quick comfort food for an Easy Soup Night.
Ingredients
2 tablespoons olive oil
1 medium onion, chopped
2 carrots, peeled and diced
2 celery stalks, chopped
3 garlic cloves, minced
1 teaspoon ground cumin
1/2 teaspoon paprika
1/2 teaspoon turmeric
1/4 teaspoon black pepper
1 cup dried lentils, rinsed
1 (14 oz) can diced tomatoes
6 cups vegetable broth
2 cups chopped kale or spinach
Salt to taste
Instructions
Heat olive oil in a large pot over medium heat.
Sauté onions, carrots, and celery for 5–7 minutes until softened.
Add garlic and spices, cook 1 minute until fragrant.
Pour in lentils, tomatoes, and broth. Bring to a boil.
Reduce heat and simmer covered for 25–30 minutes until lentils are tender.
Stir in greens and simmer an additional 5 minutes.
Season with salt to taste and serve warm.
Notes
Store leftovers in airtight containers for up to 4 days.
Soup freezes well for up to 3 months.
Optional: Blend half the soup for a creamier texture.
