Ingredients
2 lbs Yukon gold potatoes
1 bulb garlic
4 tbsp butter (or plant-based)
1/2 cup whole milk or oat milk
Salt to taste
Pepper to taste
Fresh thyme or chives (optional)
Instructions
1. Peel and cube the Yukon gold potatoes, then boil in salted water until fork-tender.
2. Roast garlic at 400°F for 25 minutes.
3. Drain potatoes and return to the pot.
4. Squeeze out roasted garlic into the pot.
5. Mash together with butter, milk, salt, and pepper.
6. Adjust consistency with extra milk if needed.
7. Top with fresh thyme or chives if desired.
