Ingredients
8 large eggs
1 ½ cups oat milk
2 cups shredded cheddar cheese
2 cups cooked diced sweet potatoes
1 medium onion, finely chopped
1 bell pepper, diced
1 cup chopped spinach
1 cup halal grilled chicken, shredded
Salt and pepper to taste
1 tsp olive oil
Instructions
Preheat oven to 375°F. Lightly grease a 9×13 inch baking dish.
Sauté diced onions and bell peppers in olive oil until soft. Stir in spinach; cook 1–2 minutes until wilted.
In a large mixing bowl, whisk together eggs, milk, salt, pepper, and spices.
Fold in cheese, sweet potatoes, cooked vegetables, and chicken.
Pour mixture into prepared dish. Bake uncovered for 35–40 minutes until the center is set.
Cool for 5 minutes. Slice and serve or store for meal prep.
Notes
Can be prepped the night before and baked fresh in the morning.
Great freezer-friendly option when sliced and individually wrapped.
