Description

A simple yet flavorful egg salad with a twist.


Ingredients

6 large eggs

1/4 cup mayonnaise

1 tablespoon Dijon mustard

2 tablespoons chopped chives or green onions

Salt and black pepper to taste

Optional: 1 tablespoon chopped dill pickles or capers


Instructions

Place eggs in a saucepan and cover with water by 1 inch. Heat on high until boiling.

Remove from heat, cover, and let sit for 12 minutes.

Mix mayonnaise, mustard, chives, salt, and pepper in a bowl. Add pickles if desired.

Cool eggs in ice water until comfortable to touch, then peel.

Chop eggs and combine with mayonnaise mixture.

Notes

Use fresh eggs for best results.

Works well with toast or as a sandwich filler.
