Easy, crispy, and flavorful air-fried eggplant cubes seasoned with smoked paprika, cumin, and garlic for the perfect snack or side dish.
Ingredients
1 large eggplant (cut into 1-inch cubes)
2 tablespoons olive oil
1 teaspoon smoked paprika
½ teaspoon ground cumin
1 garlic clove, minced
½ teaspoon sea salt
¼ teaspoon black pepper
1 tablespoon nutritional yeast (optional)
1 tablespoon cornstarch
Fresh parsley or sumac to garnish
Instructions
Cut eggplant into 1-inch cubes and sprinkle with salt.
Let rest for 5 minutes, then pat dry.
Toss cubes with oil, spices, garlic, cornstarch, and nutritional yeast.
Preheat air fryer to 375°F.
Place cubes in a single layer inside air fryer basket.
Air fry for 15 minutes, shaking halfway through for even cooking.
Top with parsley or sumac and serve warm.
Notes
For even crispier texture, use rice flour instead of cornstarch.
Pairs well with tahini or yogurt-based dips.
