Description
A deliciously simple and nutritious egg casserole with fresh spinach, bell peppers, and mushrooms, topped with cheddar cheese.
Ingredients
6 large eggs
2 cups fresh spinach
1 cup chopped bell peppers
1 cup diced mushrooms
1 cup cheddar cheese
Salt and pepper to taste
1 tablespoon olive oil
Instructions
Preheat oven to 350°F.
Lightly grease a baking dish with olive oil.
In a large bowl, whisk eggs with salt and pepper.
Fold in spinach, bell peppers, and mushrooms.
Pour mixture into prepared dish and sprinkle cheese on top.
Bake for 25 minutes or until eggs are set and golden.
Notes
Substitute spinach with kale for a different flavor.
Cheddar cheese adds richness, but feta can be used for a sharper taste.
