Description

Moist, spiced pumpkin apple muffins that are perfect for fall mornings or potlucks. Easy to make and freezer-friendly.


Ingredients

1.5 cups all-purpose flour

1 tsp baking powder

0.5 tsp baking soda

1 tsp cinnamon

0.25 tsp salt

1 cup pumpkin purée

2 eggs

0.33 cup olive oil

0.5 cup brown sugar

0.5 cup grated apple

0.25 cup chopped pecans (optional)


Instructions

Preheat oven to 350°F (177°C). Line muffin tin with liners or use a non-stick tray.

In one bowl, combine flour, baking powder, baking soda, cinnamon, and salt.

In another bowl, mix pumpkin purée, eggs, oil, and sugar until smooth.

Fold dry mix into wet ingredients. Stir in grated apple and nuts if using.

Spoon batter into muffin tins evenly.

Bake for 20–22 minutes. Cool in pan 5 minutes, then move to rack.

Notes

Store in airtight container up to 3 days.

Freeze wrapped individually for up to 2 months.
