Ingredients
1 cup pumpkin purée
1¼ cups rolled oats, ground into flour
½ cup maple syrup
¼ cup avocado oil
1 tsp baking soda
1 tbsp pumpkin pie spice
Instructions
Preheat oven to 350°F and prepare loaf pan with parchment or oil.
Grind oats to flour texture using a food processor.
Mix pumpkin, maple syrup, oil, and spice in a bowl.
Add dry ingredients. Stir until smooth.
Pour batter into loaf pan, adding toppings like oats or nuts if desired.
Bake 35–40 minutes or until a toothpick inserted in center comes out clean. Cool fully before slicing.
Notes
Freeze slices individually for quick grab-and-go snacks.
Sub honey if maple syrup is unavailable.
