Description

Ingredients

4 bone-in, skin-on chicken thighs

1 lb baby potatoes, halved

2 cups baby carrots

2 tbsp olive oil

1 tsp garlic powder

1 tsp onion powder

1/2 tsp smoked paprika

1 tsp dried Italian herbs

Salt and pepper to taste

Optional: grated parmesan, lemon zest


Instructions

Preheat oven to 400°F.

Toss baby potatoes and carrots with olive oil and seasonings.

Spread veggies on a non-stick sheet pan.

Season chicken and place on top of veggies.

Bake for 45–50 minutes until chicken reaches 165°F and the skin is crispy.

Optional: Finish with parmesan and lemon zest before serving.
