Ingredients

Feta cheese (block, not crumbled) – 7 oz

Cherry tomatoes – 2 cups

Extra virgin olive oil – 1/4 cup

Garlic cloves, minced – 3

Pasta (penne, rigatoni or spaghetti) – 12 oz

Fresh basil, torn – 1/4 cup


Instructions

1. Preheat your oven to 400°F.

2. In a baking dish, add cherry tomatoes and spread evenly. Place the block of feta cheese in the center.

3. Drizzle everything with olive oil, sprinkle with salt, pepper, and the minced garlic.

4. Bake uncovered for 30 minutes, until tomatoes burst and the feta is golden-brown.

5. While the cheese bakes, boil pasta according to the package. Save ½ cup of pasta water before draining.

6. Once out of the oven, stir the warm feta and tomatoes until it forms a creamy sauce.

7. Add cooked pasta and stir. Use reserved pasta water if needed to loosen the sauce.

8. Toss in fresh basil and serve warm.

Notes

Try goat cheese for a tangier variation or swap cherry tomatoes with diced heirlooms.

Add grilled chicken, sautéed mushrooms, or spinach for protein and depth.

Serve hot or chilled; leftovers make a great pasta salad.

Use arugula if you don’t have basil. A splash of lemon juice adds brightness.
