Description

A moist, spiced fig cake made with fresh or jammed figs—rooted in Southern tradition but perfect for modern home cooks.


Ingredients

2 cups all-purpose flour

1 tsp baking soda

1/2 tsp salt

1 tsp ground cinnamon

1/2 tsp ground nutmeg

1 cup mashed ripe figs or fig jam

1 cup sugar

2 large eggs

3/4 cup neutral oil

1 tsp vanilla bean


Instructions

Preheat oven to 350°F and prepare a loaf or bundt pan.

Mix dry ingredients (flour, baking soda, salt, cinnamon, nutmeg) in one bowl.

In another bowl, beat sugar, eggs, and oil until smooth.

Stir in mashed figs and vanilla.

Gradually fold in dry ingredients; do not overmix.

Pour into pan and smooth top.

Bake 60 minutes or until a toothpick comes out clean.

Cool for 10 minutes, then transfer to wire rack.

Notes

Swap fig jam for mashed figs for a quicker version.

Add chopped walnuts for a crunchier texture.

Excellent served with lemon glaze or coconut milk ice cream.
