Description
Creamy garlic mashed potatoes with roasted garlic, butter, and a hint of cream cheese—perfect for holidays or any comforting dinner. A childhood classic with a bold flavor upgrade.
Ingredients
3 lbs Yukon Gold potatoes
1 head of garlic
4 tbsp unsalted butter
½ cup sour cream or cream cheese
½ cup whole milk or heavy cream
Salt and black pepper
Instructions
1. Preheat oven to 400°F. Slice off the top of your garlic head, drizzle with olive oil, wrap in foil, and roast for 35 minutes.
2. While garlic roasts, peel and chop potatoes into equal-size chunks. Boil in salted water for about 15–20 minutes or until fork-tender.
3. Drain and return potatoes to the hot pot (residual heat helps evaporate excess moisture).
4. Squeeze out the roasted garlic cloves directly into the pot. Add butter, sour cream, and half the milk.
5. Mash to your desired consistency. Add extra cream as needed. Taste and season with salt and pepper.
6. Serve hot with a drizzle of olive oil or a pat of butter.
Notes
For deeper flavor, simmer roasted garlic in milk before mixing.
Add Parmesan, chives, or turkey bacon bits for variation.
To keep warm, store in a slow cooker on the warm setting.
Leftovers make great potato pancakes or soup thickeners.
