This zesty and versatile garlic pesto is perfect for pastas, spreads, marinades, and more. Made with fresh basil, garlic, and your favorite nuts, it stores beautifully in the fridge or freezer.
Ingredients
2 cups fresh basil
4 cloves garlic (roasted or raw)
1/3 cup pine nuts (or walnuts, almonds, or cashews)
3/4 cup extra virgin olive oil
Salt and black pepper to taste
Instructions
Toast the nuts in a dry skillet over medium heat for 5 minutes.
Add basil, garlic, nuts, salt, and pepper to a food processor.
Pulse several times, then steadily drizzle in olive oil while blending.
Blend until smooth but slightly textured.
Store in airtight jar with oil covering top. Refrigerate or freeze in molds.
