Ingredients
1.5 pounds Yukon Gold or Baby Red Potatoes (bite-size preferred)
6 cloves Fresh Garlic (finely minced)
1/4 cup Olive Oil (extra virgin)
2 tbsp Fresh Parsley or Rosemary (chopped)
Salt & Black Pepper to taste
Optional: 1/3 cup Grated Parmesan
Instructions
1. Preheat oven to 425°F. Line a baking sheet with parchment or foil.
2. Halve or quarter potatoes so they’re all roughly 1-inch pieces.
3. Boil in salted water 8–10 minutes until barely fork-tender. Drain and pat dry.
4. In a large bowl, mix olive oil, garlic, salt, pepper, and herb of choice. Toss in the boiled potatoes to coat evenly.
5. Spread potatoes in a single layer, cut side down.
6. Roast 25 minutes, flip once and cook another 15–20 minutes until golden and crispy.
7. Optional: Sprinkle fresh grated parmesan during final 5 minutes for extra flavor crust.
8. Serve hot with a dipping sauce like garlic lemon yogurt.
Notes
Try za’atar, gochugaru, or turmeric for a creative twist.
For extra crispiness, broil last 3 minutes.
Pairs well with grilled meats, roasted veggies, or as a breakfast hash base.
Use duck fat instead of olive oil for gourmet flair.
